Elaine’s Peanut Butter & Milk Chocolate Chip Cookies
There’s not much to dislike about peanut butter and chocolate chips – especially together! Try this peanut butter cookie recipe with a milk chocolate twist. The ghosts and goblins in your house will make sure these do a disappearing act!
Preheat Oven to 375 degrees and line two large cookie sheets with parchment paper. Recipe makes about 2 dozen cookies.
Ingredients:
- 1/2 cup butter (room temperature)
- 1/2 cup peanut butter
- 1 egg
- 1 tsp vanilla
- 1/4 cup white sugar
- 3/4 cup brown sugar
- 3/4 cup flour
- 1/2 cup ground oats or oat flour (you can grind oats in a magic bullet!)
- 1/2 tsp baking soda
- dash of salt
- 1 1/2 cups of milk chocolate chips
Directions
In a bowl – you will need some elbow grease here – cream together butter and sugars by hand with a large wooden spoon. Once creamed, add vanilla and egg. Mix well, then add peanut butter, salt and baking soda. Add flour and ground oat flour. Combine and stir in milk chocolate chips.
Drop dough by the tablespoon on cookie sheets. Leave enough room between each ball of dough for the cookie to spread as it bakes. Press dough down slightly with the tines of a fork.
Bake for 12-15 minutes. Check after 12 minutes – depending on your locale, baking time varies. Cool completely and enjoy with a class of milk.
