Peanut Butter & Chocolate Granola Cups

If you are a peanut butter lover these are for you! Try out this amazing recipe shared with us by local track cyclist Sarah Orban:

Granola Mixture:
  • 2 1/2 cups oats
  • 1cup unsalted peanuts – chopped
  • 3 tbsp all natural peanut butter
  • 4 tbsp honey or agave (or more if needed)
Filling:
  • 1 cup peanut butter – melted
Topping:
  • 1/2 cup dark chocolate – melted
  • 1 tbsp coconut oil
Directions:

For the granola mixture – in a bowl combine the oats, chopped peanuts, 3 tbsp of peanut butter and honey. If the mixture is too dry and crumbles, add more honey (and / or peanut butter) to get sticky consistency. In a cupcake pan (mini cupcake tray is ideal!) divide the oat mixture evenly. Press the mixture very firmly to get the “cups” to hold together and make a dent in the centre of each cup. Freeze for 5-10 minutes until the cups are firm.

Next, melt the cup of peanut butter and pour into the center of each granola cup. Place tray back into freezer for another 5-10 minutes.

Finally, melt the dark chocolate and coconut oil, combine and spoon on top of each frozen peanut butter cup. Chill until chocolate has set and enjoy!

Store in fridge or freezer

Coach Mary cooking notes: if the cups aren’t holding together, you must make the consistency stickier. I used large flake oats and agave because that’s what I had on hand, and upon Sarah’s advice, I added 2 additional tbsp of peanut butter until my cups held together. Next time I will try with honey and quick oats rather than large flakes. Although my finished product isn’t NEARLY as pretty as Sarah’s, they still taste great. 😋 (And yes, mine are on the right – complete with some unmelted chocolate chunks!)
