Thank you, Monica, for contributing this week’s recipe. This salsa-like dip is a huge hit at LYNX training camps and post-race BBQs. It is absolutely delicious and quite addictive too! There are many variations of this dip but Monica’s version is our favorite!

Ingredients:

2 avocados, mashed
1 green pepper chopped
1/2 red onion chopped
2 cans black beans rinsed and drained  (black-eyed peas work well too)
1- 19 oz. can chopped tomatoes with chilies. (Rotel brand if you can find it)
3/4 c. Zesty Italian dressing
Juice of one lime
Salt to taste

Mix it all together, serve with tortilla chips and enjoy!
